What You Will Need

  • 750g flour
  • 155g butter
  • 25g yeast
  • 125g milk
  • 20g water
  • 20g salt
  • 3g sugar
  • 300g Orkney cheddar (grated)

Sieve flour, salt and sugar

Heat butter, milk, water to 35°C

Add yeast and dissolve

Pour onto flour, mix well, cling film and leave to rest at room temperature

Roll out to 1mm and cut into thin batons

Sprinkle ½ of the baton with Orkney cheddar

Place on non-stick tray

Cook at 180°C for 8 minutes until golden
