What You Will Need

Ingredients
  • 120g water
  • 80g milk
  • 200g eggs
  • 120g flour
  • 8g salt
  • 1g nutmeg
  • 1g paprika
  • 60g butter
  • 400g Orkney cheddar
  • 30g egg wash

Method

Bring the water, milk, butter, salt, nutmeg and paprika to boil, remove from heat

Sieve the flour and add mixing with a spoon

Return to a low heat and stir until the mix leaves the sides of the pan

Remove from heat and cool then slowly add the eggs, mixing well

Mix in the grated Orkney cheddar, keeping 50g aside to sprinkle on top

Put mix into piping bag and pipe into small balls, approx 3cm

Brush with egg wash and sprinkle with Orkney cheddar

Cook at 180°C for 9 minutes until golden
