Orkney provides a postcard picture of whisky distilling in Scotland. Highland Park was voted the best spirit (not just whisky) in the world and that is credited to the unique peat here. You'll notice there are very few trees so the soil is very pure and holds no wood content. This means the peat is pure compact earth, settling over thousands of years, and burns gently, imparting a sweet and floral smoke on the malt barley which is instantly recognisable in the whisky.
